My belated valentine, among other things.

Hey guys! I am sorry it's taken me so long to write this post, but I've been sort of distracted lately. I've been caught somewhere between my past and the future, and it's not the present. Honestly, my mind has been all over the place these past couple of weeks, but I finally uploaded the valentine pictures! Here they are!

Let them eat cake!

Hello there! First of all, I would like to offer my sincere apologies for not posting any sooner, and I also apologize for the lack of pictures in this post. See, I've been baking...a lot. And I kind of...well, I sort of keep forgetting to take pictures of my recipes until it's about time to put the icing on the cake (there's no pun, it just sounds like one). Anywho, here is a picture of one of the end products. The recipe link is attached under the photo. Enjoy!

Simple Vanilla Cake, in the shape of a basketball.

Esther's Buttercream Frosting

1 cup (2 sticks) unsalted butter, softened
1 16oz bag of powdered sugar
2 tsp vanilla extract
1 Tbsp milk
Food coloring (optional)

  1. Place the butter in a large bowl. Set the mixer on medium, and cream the butter for 4-5 minutes, or until smooth and creamy.
  2. Add in a cup of powdered sugar, and mix well. Continue adding one cup of sugar at a time and mix thoroughly each time. 
  3. Halfway through the bag of sugar, add in the milk and vanilla extract. Mix on low speed from here on out.
  4. Add in the rest of the sugar and mix  until it is well incorporated. 
  5. Once you're done mixing, you can add food coloring until it has reached the color you want. If the frosting becomes too runny just add in another cup of sugar at a time, until it has reached the consistency you prefer.
*Note: I suggest using the Wilton food coloring gels (found at Jo-Ann, Michael's, or any other crafts store). If not, then you should try the Betty Crocker food coloring gels (found at Publix or your local supermarket).

Just one of THOSE days...

You ever have one of those days when nothing seems to go right? Today was one of those days. I woke up late. My three tier cake that I was going to make for my grandmother's 80th birthday just turned into a bunch of cupcakes for my co-workers because the batter wasn't right, and I realized, as I was mixing in the blue food coloring, that my grandma would probably not understand why I made a blue velvet cake for her since she's probably never tried a red velvet cake in the first place, so she'd just be confused, and then I just got frustrated and turned my "three tier cake" into two batches of blue velvet cupcakes which my co-workers had better appreciate tomorrow morning. And then, while making dinner at the same time, I burnt my finger while draining the boiling water from the pasta. Aaaaah! Today's been lovely....

So, after dinner, I took a cupcake, made me some Yogi tea, crawled up onto my bed with my Macaboo (that's my laptop's name), and I watched the end of the first season of Desperate Housewives on Netflix. There's nothing better than a hot cup of tea and a great drama-filled show to bring an off-day to an end. So here I am, posting my humanly frustrations, and posting the recipe I used for the blue velvet cupcakes of which I was too frustrated to take pictures.
