Blueberry Muffins!

Hey guys! I had the day off on Wednesday and decided it was about time I did something with those blueberries sitting in the fridge. I mean, I could have eaten them just as they were, but I was in the mood for Norah Jones, and Norah Jones (to me) means I'm in the baking mood. Don't ask why, but her music just takes me away to another world (kind of like baking).

The recipe I used is from this fellow blogger I found through Pinterest.


Here are some pics I took throughout the process.

My mise en place :)

Adding butter to flour and sugar to make me some STREUSEL! Mmm...butter.


Cooked blueberry mixture: 1 cup blueberries, 1 tsp sugar, 1 Tbs H2O

Dry ingredients: 2 1/2 c flour, 2 1/2 tsp baking powder, & 1 tsp salt. I forgot to take a picture of the wet ingredients. Sowwy.

Using ice cream scoop, place batter in lined muffin tin (full), place about a tsp of cooked berry mix on top & swirl in 8 motion with toothpick. Place streusel on top and put it in a pre-heated, 425°F oven for 17-19 minutes.

Ta-Da! Once they're done, just let them cool in the tin for a few minutes, pop them out onto a drying sheet, and you're good to go (or eat...I prefer the eating than the going).

Beware! These tend to grow legs and run away into someone's mouth right away.




I had a great time baking these, and this recipe is going into my favorites list, for sure!
